That’s right, Sunday is the big day. The day that a lot of red-blooded American males dream about, and prepare for all year – and if they are lucky enough, their wives and girlfriends want to join in…

Super Bowl Sunday is almost upon us. That’s right, one professional league is in Tampa winding down their season, while another professional league is on it’s way to Daytona Beach to kick-off theirs (more on that next week).

Now I know in this economy with the way things are right now, with a lot of you out of work and worried about holding on to your cribs and keeping the lights and heat turned on, the last thing you may be thinking about is holding some gameday shin-dig at your place. You may think that you have to celebrate the day with nothing but a few stale crackers because that’s all you can afford right now.

Well let me give you some advice – do anything you can to celebrate the day and be creative about it. Just because you may not have what you are used to doesn’t mean that you have to stop and be glum about it. Take a look around you and see what you do have. Look at what is in your pantry or your freezer and be grateful for it first of all, and second – think of the creative things you can do with it. For those of you out there who are of the same mind as I am – remember that this is part of the Law of Attraction. Be grateful for what you have, and you will start to aquire more.

I’ll give you a great example of what I’ve got in my pantry and freezer and how I’ve decided to use what I’ve got.

Originally I was going to do Honey BBQ Wings for Sunday. Well that kind of fell by the wayside because we don’t really have the money to spend on that. It doesn’t matter if we got them from KFC or if we got them frozen at the store, it wasn’t enough to justify spending money for something we were going to eat once if it was just going to be the two of us. So what do we have that we can use instead?

Well looking in the pantry we’ve got potatoes, molasses, beans and soda, looking in the fridge we got shredded cheese, honey mustard, ketchup, sour cream and hot dog buns, and looking in the freezer we’ve got hot dogs and bacon.

Excellent! So right there we’ve got hot dogs – always best when eaten either at the game or in front of it. Combine the mustard, ketchup, beans and molasses in a crock pot for a few hours to make BBQ Baked Beans as a side dish. We usually add bacon and hot dogs in the beans to give it more uumf, but today we have other plans for those. So we take the potatoes, cheese, sour cream and bacon and what do we have?

I found a recipie for potato skins at a football video gaming site I go to in a thread about our favorite Super Bowl Foods…

As many large baking potatoes as you want
melted butter
Toppings: such as cheese, sour cream, bacon, green onion, horseraddish, chives, and tomatoes

Preheat oven at 350 degrees F.

Clean and bake potatoes in oven for 1 hour. When done, allow to slightly cool and cut into halves.

Preheat grill to medium heat.

Scoop out the pulp, leaving a 1/4-inch thick shell for the toppings. Cut the potatoes into quarter wedges, brush with butter and season with salt and pepper.

Place on grill and cook until crisp, about 10 minutes. During the last few minutes of grilling, remove potatoes and place on a cookie sheet. Top the potatoes with cheese and bacon and place back on top of grill.

While potatoes are grilling, combine the sour cream and horseradish in a small bowl and mix well.

Place potatoes on serving plates and top with the green onions, chopped tomatoes and the sour cream horseradish sauce. Sprinkle with chopped chives, for garnish.

So this Sunday while you are watching the game and either laughing at the commercials or remarking how lame they are, just remember to appreciate what you have now. Remember to be grateful for who is in your life, because when we start to look around us and see what we truly have, we realize that money is sometimes not the most important thing that we may have. Don’t get me wrong having money is part of being wealthy, but some things and some people are still more important.

Remember that this Sunday as you spend time with family and friends.
